Grilled Sweet & Tangy Chicken

Just a few short months back, a group from Hobe Sound, Fla. decided to put on a BBQ contest. Congratulations go out the entire Hobe Sound Chamber of Commerce staff for making it happen in a big way on July 9-10, as 30 professional teams and six backyard teams competed in the “2010 Hobe Sound Bar-B-Que Festival.” It was amazing to me to see the amount of people that showed up in the heat of the summer.

No one expected those kind of crowds, and several vendors ran out of food. The BBQ battle was one for the books, as Big Papa’s Country Kitchen and Forrest Dilmore of Forrest’s Fine Foods battled down to the last drop of sauce in the final category. Forrest took 1st place in Brisket, Big Papa’s placed 1st in Pork, EB’s Pit Stop Barbecue was 1st in Chicken, and Corky’s BBQ placed 1st in Ribs. When the smoke cleared, it was Big Papa’s winning the Grand Championship (thanks to placing second in three categories) to edge out Forrest Fine Foods, who won Reserve Grand. C Elliotts BBQ took 3rd, Cook’s Portable Smokehouse took 4th and EB’s Pit Stop took 5th in a good contest.

The organizers worked hard to make everyone feel welcome, and I see this becoming a big contest. Put it on your schedule for next year, because everyone will be prepared. In the backyard division, Sunrise BBQ took Champion honors with Camp Murphy’s taking 2nd, Green Eggs and Ham placing 3rd, Smokin’ Parrotheads taking 4th, 3 Little Pigs in 5th and Scooters BBQ finishing in 6th. Great job to all who walked the stage, and we will see you at a contest soon.

A quick update on some of BBQ families: Wendy Wolfe of Wolfe Brothers BBQ had some surgery and seems to be doing well. Mad Dawg of Kick The Tire, Light The Fire fame is fighting the good fight, and I wish he would get back soon. Diane with Just Fer Fun is fighting hard, and we wish her well. We love you all and think of you every day. Mike and Kathy Rossiter of Team Bubba Chuck welcomed Juliane Linnette Rossiter to the “Chuck Clan” this week, and mom and baby are doing well. Here is a great chicken recipe for the grill.

Recipes

Grilled Sweet & Tangy Chicken

Ingredients:

• 6 leg quarters (leg and thigh)

Rub Ingredients:

• 1.5 teaspoons dried oregano

• 1.5 teaspoons dried thyme

• 1/2 teaspoon onion powder

• 1/4 teaspoon black pepper

Sauce Ingredients/Instructions: In a saucepan, cook 1/2 cup finely-chopped onion and 2 cloves of garlic, minced. Stir in 1 tablespoon hot olive oil and warm until onion is tender. Stir in 1/4 cup of bottled chili sauce, 1/2 cup unsweetened pineapple juice, 1/4 cup honey, 2 tablespoons Worcestershire sauce and 1/2 teaspoon dry mustard.

Bring to boil and let simmer 20 minutes or so.

Start charcoal.

Rub chicken with rub ingredients (above) and put on hot grill (indirect heat - away from direct flame). Cook chicken to 180 degrees internal temperature. Baste with sauce and enjoy!

*(continued from above) Be sure to come to our “Fun Cook” over Labor Day weekend (Sept. 3-4) at Clerbrook RV Resort in Clermont, Florida for a “No Holds Barred” FBA cooking class. The class is open to all FBA members who will be instructed by the head cooks of teams that have won Grand Championships in several FBA-sanctioned contests over the years.
